Corvina Grill

Gut and rinse 10-12 small fish. (You may substitute any small 7”-8”-long saltwater fish for Corvina.)

Fill the cavity of each fish with chopped garlic chives and chopped fennel. Rub fish with olive oil and place them on a medium hot grill.

Grill Corvina for 3-4 minutes per side or until tender and flaky.

Remove from grill and season with sea salt, sprinkle with chopped cilantro, more chopped garlic chives, drizzle with more olive oil, garnish with lime slices and serve. Serves six.
